🛒 *Ingredients:* 
➤ 1 cup gram flour (besan) 🌾
➤ 2 tbsp oil 🧈
➤ 1 tsp mustard seeds 🌱
➤ ½ tsp cumin seeds 🌿
➤ 8–10 curry leaves 🍃
➤ 2 green chillies (finely chopped) 🌶️
➤ 1 medium onion (finely chopped) 🧅
➤ 1 tsp ginger-garlic paste 🧄
➤ ½ tsp turmeric powder 🌼
➤ 3 cups water 💧
➤ Salt to taste 🧂
➤ 2 tbsp fresh coriander (chopped) 🌿

👩‍🍳 *Method:* 

1️⃣ In a bowl, whisk together gram flour (besan) and water until you get a smooth, lump-free mixture. Keep it aside. 🥣

2️⃣ Heat oil in a pan. Add mustard seeds and cumin seeds. Once they begin to crackle, add curry leaves and green chillies. 🌱🍃

3️⃣ Add the chopped onion and sauté until soft and lightly golden. Stir in the ginger-garlic paste and cook until the raw aroma disappears. 🧅🧄

4️⃣ Sprinkle in the turmeric powder and mix well. Slowly pour the prepared besan mixture into the pan while stirring continuously to avoid lumps. 🌼🥣

5️⃣ Cook on medium heat for 8–10 minutes, stirring frequently, until the Pithla becomes thick, smooth, and creamy. 😍

6️⃣ Taste and adjust the salt if needed. Garnish generously with freshly chopped coriander leaves. 🌿

7️⃣ Serve piping hot with Jowar Bhakri, Bajra Bhakri, Chapati, steamed rice, or spicy green chilli thecha for an authentic Maharashtrian meal. 🍽️❤️
