🍛 *Rajasthani Gatte Ki Sabji – Traditional & Delicious* 
A classic Rajasthani curry made with soft besan gatte simmered in a spiced curd gravy. Perfect with roti, paratha or rice! 😋✨

🧾 *Ingredients:* 

➡️ *For Gatte:* 
• 1 cup besan
• 2 tbsp curd
• 1 tbsp oil
• ½ tsp red chilli powder
• ½ tsp turmeric
• ½ tsp ajwain
• Salt to taste
• Water as needed

➡️ *For Gravy:* 
• 1 cup curd (whisked)
• 1 tbsp besan
• 1 tbsp oil/ghee
• ½ tsp cumin
• ½ tsp mustard seeds
• 1 pinch hing
• 1 tsp red chilli powder
• ½ tsp turmeric
• ½ tsp coriander powder
• Salt to taste
• 1 cup water

🍳 *Instructions:* 
1️⃣ Mix besan, curd, oil and spices to make a stiff dough. Roll into logs and boil for 8–10 minutes. Cut into pieces.
2️⃣ Heat oil/ghee and add cumin, mustard seeds and hing. Add dry spices.
3️⃣ Mix curd + besan + water and pour into the pan. Cook on low flame.
4️⃣ Add gatte pieces and simmer for 5–7 minutes.
5️⃣ Serve hot with roti or rice!
