🍯 *Makhana Kheer Recipe (Foxnut Pudding)* 

Makhana Kheer is a delicious and creamy dessert made with lotus seeds (foxnuts), milk, and dry fruits. It is especially prepared during Janmashtami and other fasting (vrat) days.

🛒 *Ingredients (Serves 3–4)* 
➡️ 1 cup makhana (foxnuts/lotus seeds)
➡️ 1 liter full-fat milk
➡️ ½ cup sugar (adjust to taste)
➡️ 2 tbsp ghee
➡️ 8–10 cashews & almonds (chopped)
➡️ 7–8 raisins
➡️ 4–5 cardamom pods (powdered)
➡️ A few saffron strands (optional)

🥄 *Instructions* 
➡️ Heat ghee in a pan and roast makhanas on low flame until crisp.
➡️ Let them cool slightly, then crush half of them coarsely (keep the rest whole).
➡️ In a heavy-bottomed pan, boil milk and let it simmer until it thickens.
➡️ Add roasted makhanas (whole + crushed) and cook for 8–10 minutes.
➡️ Stir in sugar, cardamom powder, cashews, almonds, and raisins.
➡️ Cook for another 5 minutes, stirring occasionally.
➡️ Add saffron strands for extra flavor and aroma.
➡️ Serve warm or chilled as a festive sweet dish.
