🍽️ *Maharashtrian Kaanda Bhaji Recipe | Crispy Onion Pakoras* 
🧅 Crispy, spicy, and full of flavor — this kaanda bhaji is a monsoon favourite across Maharashtra!

🛒 *Ingredients* 
🔸 2 large onions (thinly sliced)
🔸 1 cup besan (gram flour)
🔸 1 tbsp rice flour (for extra crispiness)
🔸 2 green chilies (finely chopped)
🔸 1 tsp red chili powder
🔸 ½ tsp turmeric powder
🔸 A pinch of hing (asafoetida)
🔸 Handful of fresh coriander (chopped)
🔸 Salt to taste
🔸 Oil for deep frying

🔪 *Instructions* 
1. Prepare Onions
In a large bowl, add sliced onions and a little salt. Mix well and let it rest for 10 minutes. Onions will release water.

2. Add Spices
Add green chilies, red chili powder, turmeric, hing, and chopped coriander to the onions.

3. Make Bhaji Batter
Add besan and rice flour gradually. Mix everything well. Do not add water. The moisture from onions is enough to form a thick batter. If needed, sprinkle a few drops of water.

4. Heat Oil
Heat oil in a deep pan on medium flame.

5. Fry the Bhajis
Drop small portions of the mixture into the hot oil. Fry till golden brown and crispy. Don’t overcrowd the pan.

6. Drain and Serve
Remove on a tissue-lined plate to absorb excess oil.
