🥔 *Stuffed Bell Peppers | Baked Veggie Delight*
These stuffed bell peppers are colorful, flavorful, and packed with nutrition. Filled with a mix of spiced veggies and rice, it’s a perfect light dinner or lunchbox option!
🛒 *Ingredients:*
4 medium bell peppers (any color)
1 cup cooked rice (white or brown)
1 small onion (finely chopped)
1 small tomato (chopped)
½ cup boiled corn or peas
½ tsp cumin seeds
½ tsp garam masala
½ tsp red chili powder
Salt to taste
1 tbsp oil
Chopped coriander
Grated cheese (optional, for topping)
🔪 *Instructions:*
1. Prepare Bell Peppers:
Cut the tops of the bell peppers and remove seeds. Blanch in boiling water for 2–3 minutes. Drain and set aside.
2. Make the Filling:
Heat oil in a pan. Add cumin seeds and sauté onion until golden.
Add tomato, corn/peas, spices, and salt. Cook for 3–4 minutes.
Mix in cooked rice and chopped coriander. Stir well.
3. Stuff the Peppers:
Fill each bell pepper with the prepared mixture. Top with grated cheese if using.
4. Bake:
Place stuffed peppers in a baking dish. Bake at 180°C (350°F) for 15–20 minutes until the tops are golden.
5. Serve Hot!
Enjoy with yogurt dip or as a side with soup or salad.
