🍛 *Masala Khichdi Recipe | Comforting One-Pot Indian Meal*
Masala Khichdi is a spiced version of traditional khichdi, combining rice, lentils, vegetables, and aromatic spices into a wholesome, delicious, and satisfying one-pot meal — perfect for lunch or dinner!
🛒 *Ingredients*
*For Khichdi:*
1/2 cup rice
1/4 cup moong dal (yellow split lentils)
1 onion (chopped)
1 tomato (chopped)
1/4 cup green peas
1/4 cup chopped carrots
1 green chili (optional)
1 tsp ginger-garlic paste
2 tbsp ghee or oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp turmeric
1/2 tsp red chili powder
Salt to taste
3 cups water
Fresh coriander leaves for garnish
👩🍳 *Instructions*
1. Wash & Soak:
Wash rice and dal together. Soak for 15–20 minutes, then drain.
2. Tempering:
Heat ghee/oil in a pressure cooker. Add mustard seeds, cumin seeds. Let them splutter.
3. Sauté:
Add onions, green chili, and ginger-garlic paste. Sauté till golden.
4. Add Veggies & Spices:
Add tomatoes, carrots, green peas. Cook for 2–3 minutes.
Add turmeric, red chili powder, and salt.
5. Mix & Pressure Cook:
Add soaked rice-dal mix and water. Mix well.
Pressure cook for 2–3 whistles on medium heat.
6. Garnish & Serve:
Let the pressure release naturally. Stir and adjust consistency.
Garnish with fresh coriander.

Serve hot with curd, papad, or a dollop of ghee for extra flavor.
