🍲 *Homemade Daal Dhokli Recipe | Rajasthani-Gujarati Comfort Food* 
Daal Dhokli is a wholesome, one-pot meal where spicy wheat flour dumplings (dhokli) are simmered in a tangy, flavorful dal. It's a perfect comfort food — hearty, healthy, and nostalgic!

🛒 *Ingredients* 
👉 For the Dal:
1 cup Toor Dal (Arhar Dal)
1 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
A pinch of asafoetida (hing)
1-2 green chilies, slit
1 tsp grated ginger
8-10 curry leaves
1 tomato, chopped
¼ tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
1-2 tbsp jaggery (optional)
1 tbsp lemon juice or tamarind pulp
Salt to taste
4 cups water
Fresh coriander for garnish

👉 For the Dhokli (Wheat Dumplings):
1 cup whole wheat flour
2 tbsp gram flour (besan)
1 tsp carom seeds (ajwain)
½ tsp red chili powder
¼ tsp turmeric powder
Salt to taste
Water as required to knead
1 tsp oil

👩‍🍳 *Instructions* 
1. Prepare the Dal:
Wash and pressure cook toor dal with 2.5 cups water, turmeric, and a pinch of salt (2-3 whistles).

Mash the cooked dal well and set aside.

2. Make the Dhokli Dough:

In a bowl, mix wheat flour, besan, ajwain, red chili powder, turmeric, and salt.

Add water little by little and knead a medium-soft dough. Rest for 10 minutes.

Roll the dough into a thin roti and cut into diamond or square shapes.

3. Temper the Dal:
In a large pan, heat oil/ghee. Add mustard seeds, cumin seeds, hing, green chilies, ginger, and curry leaves.

Add chopped tomatoes and cook until soft.

Add the mashed dal, 1.5 cups water, jaggery, lemon juice/tamarind, and all remaining spices. Bring to a boil.

4. Add Dhoklis:
Drop the dhokli pieces one by one into the boiling dal.

Stir occasionally to prevent sticking.

Cover and cook on medium flame for 15–20 minutes until dhoklis are cooked through.

5. Final Touch:
Adjust consistency by adding water if too thick.

Garnish with chopped coriander and a drizzle of ghee (optional).
