*Masala Dosa recipe — crispy dosa with spiced potato filling:*

🧾 *Ingredients*

For Dosa Batter:
- 2 cups rice  
- ½ cup urad dal (split black gram)  
- 2 tbsp chana dal (optional)  
- 1 tsp fenugreek seeds  
- Salt to taste  
- Water (for soaking and grinding)

For Masala (Potato Filling):
- 3–4 boiled potatoes  
- 1 onion (thinly sliced)  
- 1 green chili (chopped)  
- 1 tsp mustard seeds  
- 1 tsp urad dal  
- Few curry leaves  
- ¼ tsp turmeric  
- Salt to taste  
- 1 tbsp oil  
- Fresh coriander (chopped)

🥣 *Preparation*

1. *Batter:*
- Soak rice, urad dal, chana dal & fenugreek seeds for 5–6 hours.
- Grind to a smooth batter, add salt & let it ferment overnight.

2. *Masala:*
- Heat oil, add mustard seeds, urad dal, curry leaves.
- Add onions, green chili & sauté.
- Add turmeric, mashed potatoes, salt & mix well.
- Cook for 2–3 mins. Add coriander & turn off heat.

3. *Making Dosa:*
- Heat a tawa, pour batter, and spread it thin.
- Drizzle some oil or ghee around the edges.
- Place some potato masala in the center.
- Fold the dosa and serve.


🍽️ *Serve With:*
- Coconut chutney  
- Sambar
