🍛 *Kala Chana Curry Recipe –* Protein-Rich & Flavorful

Kala Chana (Black Chickpeas) is a wholesome and protein-rich legume that makes for a delicious and nutritious Indian curry. Perfect with roti, rice, or even as a warm bowl by itself!

📝 *Ingredients:* 

 *For boiling chana:* 
1 cup kala chana (black chickpeas), soaked overnight
3 cups water
Salt to taste

 *For curry base:* 
2 tbsp oil or ghee
1 tsp cumin seeds
1 medium onion, finely chopped
1 tsp ginger-garlic paste
2 medium tomatoes, pureed or finely chopped
1–2 green chilies (optional), slit
½ tsp turmeric powder
1 tsp coriander powder
½ tsp red chili powder
1 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

👩‍🍳 *Instructions:* 

 *1. Soak & Boil Kala Chana* 
Soak 1 cup kala chana overnight in water. Drain and rinse.
Pressure cook with 3 cups water and salt for 5–6 whistles or until soft. Set aside.

 *2. Prepare the Masala* 
Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté till golden brown.
Add ginger-garlic paste and green chilies, sauté until raw smell goes.

 *3. Add Tomatoes & Spices* 
Add tomato puree and cook till oil starts to separate.
Add turmeric, coriander powder, red chili powder, and salt. Cook well.

 *4. Combine & Simmer* 
Add the boiled kala chana along with some of the cooking water.
Simmer for 10–15 minutes on low flame. Mash a few chana for thicker gravy if desired.
Add garam masala and mix well.

 *5. Garnish & Serve* 
Garnish with fresh coriander leaves.
Serve hot with roti, rice, or paratha!

🌿 *Tips:* 
For extra richness, add a teaspoon of kasuri methi or a squeeze of lemon before serving.
You can make it dry by reducing the water and cooking longer.
