🍴 *Serves:* 2–3  
⏱️ *Cooking Time:* 25 minutes

📝 *Ingredients*

*For Fries*  
👉 3–4 medium Potatoes (peeled & cut into fries)  
👉 2 tbsp Cornflour  
👉 Salt to taste  
👉 Oil for deep frying  

*For Cheese Sauce*  
👉 1 tbsp Butter  
👉 1 tbsp All-Purpose Flour (Maida)  
👉 1 cup Milk  
👉 ½ cup Grated Cheese (cheddar/mozzarella mix)  
👉 ½ tsp Black Pepper  
👉 ¼ tsp Red Chili Flakes (optional)  
👉 Salt to taste  

👩‍🍳 *Instructions*

*Step 1:* Soak the cut potatoes in cold water for 15–20 minutes to remove excess starch.  
*Step 2:* Drain and pat dry. Toss in cornflour and a pinch of salt.  
*Step 3:* Heat oil and deep-fry the fries until golden and crisp. Set aside on tissue paper.  
*Step 4:* In a saucepan, melt butter. Add maida and cook for 1 min on low flame (don’t brown it).  
*Step 5:* Slowly add milk while stirring continuously to avoid lumps.  
*Step 6:* Add grated cheese, salt, pepper, and chili flakes. Stir until smooth and creamy.  
*Step 7:* Place fries in a plate or bowl. Pour hot cheese sauce over them generously.  
*Step 8:* Garnish with extra cheese, herbs, or jalapeños (optional) and serve immediately!
