If you're craving a comforting, aromatic, and perfectly spiced vegetarian biryani, this recipe is your one-pot wonder. Layered with fragrant basmati rice, flavorful veggies, and traditional spices—this biryani will make your home smell like heaven!

🛒 *Ingredients* 
 *For the Rice:* 
🔸 1.5 cups basmati rice (soaked for 30 minutes)
🔸 6–7 cups water
🔸 1 bay leaf
🔸 3–4 cloves
🔸 2 green cardamoms
🔸 1-inch cinnamon stick
🔸 Salt to taste

 *For the Veggies:* 
🔸 2 tbsp oil or ghee
🔸 1 tsp cumin seeds
🔸 1 onion (thinly sliced)
🔸 1 tsp ginger-garlic paste
🔸 1 tomato (chopped)
🔸 1 cup mixed vegetables (carrot, beans, peas, cauliflower, etc.)
🔸 1/4 cup thick curd (yogurt)
🔸 1/2 tsp turmeric powder
🔸 1 tsp red chili powder
🔸 1/2 tsp garam masala
🔸 Salt to taste
🔸 Fresh coriander & mint leaves (chopped)

 *For Layering:* 
🔸 A pinch of saffron soaked in 2 tbsp warm milk
🔸 Fried onions (optional)
🔸 Ghee for drizzling

👩‍🍳 *Instructions* 

 *1. Cook the Rice:* 
In a large pot, bring water to a boil. Add whole spices and salt. Add soaked basmati rice and cook until 80% done. Drain the rice and keep aside.

 *2. Prepare the Vegetable Masala:* 
Heat oil or ghee in a pan. Add cumin seeds and sliced onions. Sauté till golden brown. Add ginger-garlic paste and cook till raw smell disappears. Add chopped tomato and cook till soft. Add turmeric, red chili powder, and salt. Mix well. Add mixed vegetables and cook for 5–6 minutes. Add curd and garam masala. Cook on medium flame for 3–4 minutes. Add fresh coriander and mint.

 *3. Layer the Biryani:* 
In a heavy-bottomed pot, spread a layer of the prepared vegetable masala. Top it with a layer of cooked rice. Sprinkle saffron milk, fried onions, and ghee. Repeat layers until all ingredients are used.

 *4. Dum Cooking (Steam):* 
Cover the pot with a tight lid or seal with dough. Cook on low flame for 15–20 minutes. You can also place a tawa beneath the pot to avoid burning.

 *5. Serve:* 
Gently fluff the biryani. Serve hot with raita, salad, or papad.
